I love desserts.  They are fun to make, the whole house smells lovely when you bake, and everyone enjoys the sweets while you get the glory.  Even thought I sometimes have selfish reasons for making yummy sweet treats they always are made with love and lots of effort.  For my family dinner this weekend I decided to make one of my favorite pies, French Silk.

This recipe includes 2 parts; part 1 making the graham cracker crust and part 2 making the pie filling.  Both are super simple to make but the processes are slightly time consuming.

Part 1

For this part you will need:

  • 12 graham crackers
  • 1/2 cup of melted butter
  • 1/2 cup of sugar

First you will need to preheat your oven to 400°. Then crush the graham crackers into crumbs.  I did this by breaking them up and putting them into a blender (if you have a food processor that works exactly the same way.) If you do not have a blender or food processor you can put the graham crackers into a gallon zip top bag and hit them with a rolling pin.

Once your graham crackers are crushed pretty finely you can remove them from your blender or bag and put them into a mixing bowl.  Next pour your 1/2 cup of melted butter and 1/2 cup of sugar into the crumbs and combine.  once this is done you can pour that mixture into a baking dish (I used a deep dish pie pan) and mold so that it covers the dish evenly.

Once this is done put the formed pie crust into your preheated oven for around 8 minutes or until the edges just start to turn golden brown. Remove from oven and let sit until it completely cool (45 minutes) and we are on to part 2!

Part 2

For this part you will need:

  • Around 4 ounces of semisweet chocolate chips melted (I used more because I didn’t want to measure exactly…pure laziness)
  • 1 cup of room temperature butter (2 sticks)
  • 1 1/2 cups of sugar
  • 1 teaspoon of Vanilla Extract
  • 4 eggs

In a small microwave safe bowl melt your chocolate chips.  I usually do 10 seconds at a time until they are all melted, during this process I take them out and mix up the chips after each 10 seconds so none are stuck to the bottom getting burned and ruining all the other perfect morsels. Once the chocolate is completely melted take them out of the microwave and set them aside to cool slightly.

Next use a mixer (either a Kitchen Aide or hand mixer) to whip your 2 sticks of butter until it is fluffy.  Once the butter is fluffed add in your 1 1/2 cups of sugar and beat again until more fluffiness happens.  After the two are incorporated add in your bowl of melted chocolate and vanilla extract, whip once more until thoroughly combined.

Now turn you mixer onto a medium speed and we will start adding the eggs.  Now this is the most important step in the pie process: Add 1 egg every 5ish minutes (adding the eggs will take 15-20 minutes total.)  After each addition of a new egg the mixture is going to change consistency and become smoother and silkier.  Once all 4 eggs are added into the mix and everything is combined pour the mixture into the cooled graham cracker crust** you already made and let it chill in the fridge for a minimum of 2 hours.

I made my pie on Thursday for dinner on Sunday but I made sure to cover it with cling wrap and tin foil so not to let it get fridge smells before I serve it.  When you are ready to serve your pie take it out of the fridge add some whipped cream (either homemade or store bought, it is your pie!) and eat that sucker!
